Treeline Barrel Rested Gin

Our Treeline Gin with time spent aging in new #3 Char New American Oak barrels using a complex aging process of combining from spirits from several barrels ranging in age from six months to two years. This spirit marries the flavor of our Treeline Gin with the effects of oak aging to create a spirit of remarkable complexity. The barrel aging adds notes of cinnamon, vanilla and baking spices to create a gin that drinks like a whiskey and is perfect served neat, on the rocks, or mixed in classic cocktails such as the Negroni, London Mule, or Old-Fashioned.

Treeline Barrel Rested Gin was awarded a Gold Medal at the 2018 San Francisco International Spirits Competition.

How do we make our barrel-rested gin?
Treeline Barrel Rested Gin starts out life as Treeline Gin but rather than proofed to bottle strength and bottled, we proof it to barrel strength (115 proof) and barrel it in new (and refilled as first-fill and second-fill) #3 charred American oak barrels (not previously filled whiskey barrels). The gin is aged separately for around 6 months in fresh barrels, one year in first-fill and two years in second-fill barrels then blended from various ages and bottled.
The barrel aging contributes color, vanillin, lignin, and tannins that tend to bring cinnamon, vanilla, and baking spices forward while sending some of the more subtle Treeline gin flavors such as anise, and pepper to the background. The key to Treeline Barrel Rested Gin is that it is harvested from the barrel while the juniper and gin botanical characteristics are still predominant. That is, we don’t want Treeline Barrel Rested Gin to lose its “gin-ness”; we want it to be a gin first but with the characteristics that can only come from time spent in a barrel.

Treeline Barrel Rested gin is bottled at 90-proof (45%) after a ten-day rest with the cutting water to fully marry the flavors before bottling.
